Our Featured Foodie this month is Carmel Hall who is originally from San Francisco and has very strong ties with Ireland. Her Mother comes from West Cork and growing up she spent idilic summers on Bere Island on the Southern Peninsula along the Wild Atlantic Way. Her keen interest in food started at a young age as her Mother was a fantastic home cook. Carmel fondly recalls her Mother teaching her the art of making Irish soda bread and she smiles as she members smell of home made cookies which regularly greeted her after school! She attended the renowned Ballymaloe Cookery School to further her culinary education. She completed a 12 week course which she interned with top chefs in top kitchens across the country. She also worked in an eminent restaurant in Italy for a month to endorse those skills she had attained.
Carmel decided to start penning down her own recipes inspired by her experiences and the people she met. She launched her blog in March 2015 and since then she has had recipes published in magazines such as Woman’s Way.ie, TheTaste.ie and West Cork Times. Like Magazine named her as an up and coming ‘Insafoodie’. Carmel has also been featured on the worldwide app, Kptn Cook. In the spring of this year she had her first introduction to radio, where she talked about her kitchen experiences, blogging and cooking demonstrations.
‘Cookin‘ with Carmel‘ has been nominated for awards more than once-and it’s only a year old! She explains to me that her blog is a marriage of her two passions: food and photography. She studied photography in college and it has definitely helped her in capturing the essence of her dishes. She further explains how she likes to work with mostly natural light but also plays around with bright colours and table settings. Carmel’s big goal is to eventually have her own cookbook and last summer she created her own mini cookbook, a recipe eBook. It’s her first one and certainly won’t be her last!
